Berry season is on full effect and honestly they might be my fave fruit right now! πŸ“β™₯️

I made these mixed berry crumble bars and omg the gooey berry filling is to die for!! 😍 the crust (which is delicious on its own!) is also gluten free, dairy free, full of fiber and has protein + healthy fats! βœ¨πŸŽ‰

Berries are full of antioxidants, anti aging phytonutrients, have been shown to improve memory, skin and reduce your risk of cancer! πŸ’•β˜€οΈ They are super high in fiber and are one of the lowest sugar fruits 🍌 🍎 πŸ‰

I’ve been adding them to Greek yogurt to make Froyo 🍨 you can add them to salads πŸ₯— or throw into pancakes πŸ₯ž or muffins for a delicious treat!!

Ingredients:

FOR THE CRUST AND CRUMBLE

β€’ 2 cups almond meal, superfineβ €β €

β€’ 1 cup rolled oatsβ €β €

β€’ 2 scoops vanilla protein powder

β€’ 1/2 cup pecan pieces

β€’ 2 tablespoons unsweetened almond milk

β€’ 1/3 cup coconut oil, room tempβ €β €

β€’ 1/3 cup @madhava organic only five agave

β€’ 1 teaspoon vanilla extractβ €β €

  • 2 tsp. Ground cinnamon

β€’ 1/8 teaspoon saltβ €β €

FOR THE BERRY FILLINGβ €

β€’ 2 cups fresh blueberriesβ €β €

β€’ 1 cup diced strawberries πŸ“

β€’ Juice of one lemon

β€’ zest from one lemon β €β €

β€’ 1/2 cup @madhava organic only five agave nectar

β€’ 3 tablespoons arrowroot flourβ €β €

β€’ pinch of saltβ €β €

Directions:

. 1. Preheat oven to 350ΒΊF and spray an 8Γ—8-inch pan with coconut oil cooking spray and set aside.

. 2. Mix all crust/crumble ingredients together in a large mixing bowl. Take 2/3 of the mixture and press it evenly onto the bottom of the oiled 8Γ—8 pan. Set the rest of the crust/crumble mixture aside (this is what you will use for the crumble topping).

. 3. Bake crust at 350ΒΊF for 10 minutes. Remove crust and set aside.

. 4. Place all ingredients for the berry filling into a medium sauce pan. Turn heat to high and bring filling to a boil, stirring often and breaking up the blueberries. Once boiling, turn heat down to low and let simmer for 10-15 minutes. Continue stirring.

. 5. Once the berry filling has thickened, purΓ©e & pour on top of the crust.

. 6. Spread the rest of the crumble mixture over the top of the berry filling and then bake for another 10 minutes at 350ΒΊF.

. 7. Let cool for 20 minutes before placing into the fridge for at least 2 hours to let the filling set. Slice and enjoy!
