Sandwich cookies are always a good idea! πŸ’• And since lemon πŸ‹ is the flavor of summer β˜€οΈ I made these super cute and delicious πŸ˜‹ lemon cream whoopie pies πŸ₯§ that are giving me alllllll the feels ❀️❀️❀️

They’re high in protein, gluten free, low carb and while they can be eaten plain without the creamy filling…. I mean come on ya need da filling!! πŸŒˆπŸ¦„πŸ§πŸ₯ This filling alone would be so delicious on fruit, graham crackers or you could use this as a frosting!!

Lemon Cream Whoopie PiesπŸ‹ πŸ₯§ πŸ’•

Ingredients:

– 1 scoop vital proteins vanilla collagen

– 1 scoop vanilla protein powder

– 1/3 cup Greek cream cheese

– Juice and zest of 1 lemon πŸ‹

– 1/2 tsp. Baking soda

– 1/2 tsp baking powder

– 1 tsp. Lemon extract

– 1/2 cup coconut flour

– 1 tsp. Vanilla extract

– 1/4 tsp pink Himalayan sea salt

– 2 eggs

– 1/4 cup swerve granular sweetener

Directions:

1. Mix eggs, sweetener, extracts and salt together. Add cream cheese until smooth.

2. Add dry ingredients and mix until combined.

3. Scoop with ice cream scoop onto baking sheet and bake for 10min at 350 degrees Fahrenheit. Makes 10 cookies

Creamy Filling πŸ₯πŸ‹πŸ₯πŸ‹πŸ₯

Ingredients:

– 1/3 cup plain Greek Yogurt

– 1/4 cup Greek cream cheese

– 1/2 scoop vanilla protein powder

– Zest of 1 lemon

– 1 tbsp. Swerve powdered sweetener

Mix and fill cookies once cooled!
