Finally debuting my Edible Vegan Pumpkin Cookie Dough Bites πŸͺπŸ’ƒπŸ½ I’ve been making this recipe for a few weeks now and I’m finally releasing it now because they don’t last very long in my house! 😜 These were made for my girl for a belated birthday present 🎁 πŸŽ‚ Because pumpkin and cookie dough are the best presents!! They’re gluten free, dairy free and actually have protein, so they are the perfect satisfying snack! πŸ˜‹

Vegan Pumpkin Cookie Dough Bites

Ingredients:

– Half can Organic pumpkin purΓ©e

– 1/3 cup cashew butter

– 1/3 cup coconut sugar

– 1/3 cup almond flour

– 1/2 cup coconut flour

– 1/2 cup unsweetened applesauce

– 1 scoop vegan vanilla protein powder

– 2 tsp pumpkin spice

– 2 tsp cinnamon

– 1/2 tsp Himalayan sea salt

– 2 cups enjoy life or Lily’s chocolate chips

– 2 tsp coconut oil

Directions:

1. Mix cashew butter, applesauce and pumpkin together.

2. Add coconut sugar and combine until

Smooth

3. Add the rest of the dry ingredients.

4. Stir in 1 cup chocolate chips.

5. Make into bites and freeze.

6. Melt the rest of the chocolate chips with coconut oil and drizzle pumpkin bites!

7. Store in the fridge until eating! Enjoy! 😊
