Happy Friday Loves! I’ve been eating this soup all week and I CANT GET ENOUGH!! I’ve been so squash obsessed ! Probably making it again next week for meal prep!! Soup is super easy way to get nutrient dense foods in a filling and super satisfying way! It’s great for weight loss, blood sugar management and could not be easier! Definitely going to be eating out all weekend because I am traveling so I need that!
This soup is filled with vitamin A, potassium, antioxidants, fiber and flavor! Plus squash is a great alternative to sweet potato because it’s less carbs and calories, but full of nutrients!
Spicy Acorn squash and Cauliflower Soup:
- 1 acorn squash
- 1 delicata squash
- 1 head cauliflower
- 1/2 large onion
- 2 carrots
- 2 tsp cayenne pepper
- 1 tsp cinnamon
- 1 tsp Pumpkin pie spice
- 2 tsp Italian seasoning
- 5 springs fresh thyme
- salt and pepper
- 2 tsp. avocado oil
- 1 cup unsweetened coconut milk
Roast squash, cauliflower, carrots & onion at 450 degrees Fahrenheit for 40min. with avocado oil and seasoning. Add to blender with spices, coconut milk and thyme leaves. Blend and top with Fage Plain Greek yogurt and traderjoes pepitas!
